Tuesday’s one dish meal
I mentioned in my weekly menu post that if Tuesday’s experiment turned out well, I’d let you know. Ohhhh mah goodness, it turned out beautifully.
Hopefully, I remember what I did…
Ingredients:
- one 8 ounce package of diced ham
- one package frozen broccoli
- one can of cream of mushroom soup
- one can of evaporated milk
- one tablespoon olive oil
- one package Rice-A-Roni (italian cheese sommin or other :))
- one can drained and rinsed garbanzo beans (chickpeas)
- optional: 1 tablespoon cornstarch dissolved in about half a cup of water, or in this case, i used white wine
Process:
Unbelievably simple. I dumped everything into my large dutch oven, stirred it all together, and baked it in the oven at 350 degrees for around 40 minutes. Towards the end, it was still too “soupy” for my tastes, so I stirred a little less than a tablespoon of cornstarch into about half a cup of white wine, then put that into the casserole and bumped the oven up to about 400 degrees for about eight minutes.
The Verdict:
Just wow. This was even better than I’d hoped. Originally, it was going to be a pasta dish, but I forgot that and the Rice-A-Roni was right there. Ever one for convenience, especially on a weeknight, I didn’t think twice but tossed it and it’s accompanying seasoning packet right on in there. (The olive oil is a nod to the directions on the rice box, in fact.) J even thought this was wonderful, and I really expected he’d balk at the garbanzo beans.
Overall, two huge thumbs up!
